Bacon Cornmeal Muffins

Ingredients:

  • 8 slices bacon
  • 4 tbsp butter
  • 4 tbsp margarine
  • 1 cup flour
  • 1 tsp sugar
  • 1/4 tsp salt
  • 1 1/2 cup cornmeal
  • 1 cup milk
  • 2 eggs

Directions:

  1. Preheat oven to 400 degrees. Grease muffin tins
  2. Fry bacon until crisp. Drain. Cut into small pieces, set aside.
  3. Gently melt the butter and margarine and set aside.
  4. Mix flour, baking powder, sugar and salt in a large bowl. Stir in cornmeal, then make a well in the center.
  5. In a saucepan, heat the milk to lukewarm. In small bowl, lightly whisk the eggs, then add to the milk. Stir in the melted fats.
  6. Pour milk mixture into the center of the well and stir until smooth and well blended.
  7. Fold in bacon.
  8. Spoon the batter into the prepared cups, filling them halfway.
  9. Bake 20 minutes or until risen and lightly colored.
  10. Serve hot or warm.
