Bacon and Mushroom Roll-Ups

Ingredients:

  • 6 -8 slices bacon
  • 1/2 medium onion, chopped
  • 1/2 tsp salt (optional)
  • 1/8 tsp black pepper
  • 1 (4 oz) package cream cheese
  • 12 slices bread
  • 1/4 cup melted butter

Directions:

  1. Saute bacon, mushrooms, onion, salt, & pepper 5-8 minutes.
  2. Stir in cream cheese; set aside and let cool for 15 minutes.
  3. Cut crusts from bread.
  4. With rolling pin, flatten bread until 1/4 thick.
  5. Spread 2 tablespoons mushroom mixture over each slice.
  6. Roll like a jelly roll.
  7. Secure with toothpicks.
  8. Refrigerate 1 hour.
  9. Put on cookie sheet and brush with melted butter.
  10. Bake 10-15 minutes at 375°F until lightly brown.
  11. Cut in half and serve warm.
  12. Makes 24 appetizer-size servings.
