Ingredients:

  • 1/3 cup sugar
  • 2/3 cup packed brown sugar
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/4 ginger
  • 1/4 tsp baking soda
  • 1/2 cup melted butter
  • 1/3 cup buttermilk

Directions:

  1. Heat the oven to 400°F.
  2. Grease 12 muffin tins or lined cups.
  3. In a large bowl: Combine all ingredients except for pumpkin, butter, buttermilk, and eggs.
  4. In seperate bowl, combine the rest of ingredients.
  5. Mix into the flour mxture until moistened.
  6. Spoon the batter into the cups.
  7. Bake about 20 minutes or until a toothpick comes out clean.
  8. Let cool before removing from the tins.
