Asparagus With Toasted Walnut Butter

Ingredients:

  • 6 tbsp butter
  • 3 tbsp finely chopped walnuts
  • 1 tbsp walnut oil , if desired
  • 1/4 tsp salt

Directions:

  1. Wash asparagus; trim off tough ends
  2. In a large skillet of Dutch oven bring 1 of water to a boil
  3. Arrange asparagus evevly is skillet
  4. Cover and cook 4 to 5 minutes or until crisp tender
  5. Drain
  6. Meanwhile in a small saucepan, combine butter and walnuts, Cook over low heat until butter browns and walnuts are toasted, watching carefully to prevent butter from burning, Stir insalt and oil, if using
  7. Arrange asparagus on a large serving platter. Top with walnut butter
  8. Recipe can easily reduced by half
