Asparagus With Almonds

Ingredients:

Directions:

  1. Snap off and discard the tough ends of the asparagus.
  2. Slice the rest on the diagonal (or, if you know how to do it, use the Chinese rolling cut).
  3. Parboil for about two minutes.
  4. Rinse in cold running water to stop the cooking process and drain.
  5. (Can be done well ahead of time).
  6. Heat the oil and toss the scallions for 15- 20 seconds.
  7. Add the parboiled asparagus and stir fry on high flame until thoroughly heated.
  8. Stir in the salt& sugar, then the almonds.
  9. Serve immediately.
  10. (Note: this dish can also be made with many other vegetables. Green beans work particularly well).
