Ingredients:

Directions:

  1. Prepare the asparagus by rinsing them thoroughly; break off any tough, white bottoms and discard.
  2. Using a vegatable pealer remove the skin off the bottom 1/2 of the asparagus spears. This makes the whole spear edible.
  3. Fill a medium sized saucepan half way with water, bring to a boil.
  4. Add the asparagus and reduce heat slightly to a simmer.
  5. Parboil the asparagus for exactly 3 minutes.
  6. Drain the hot water.
  7. While the asparagus are still hot, toss them in a bowl with the olive oil, Parmesan, and lemon zest.
  8. Salt and pepper to taste.
  9. Serve warm or room temperature.
