Ingredients:

Directions:

  1. Great tip on cooking easy quick chicken.
  2. Defrost Chicken tenders.
  3. Lightly cover in olive oil and pepper (omit the salt, it dries it out!)
  4. Bake at 350 for 20 min in a shallow baking sheet (with sides)
  5. Cool slightly and chop up in 1/2 inch pieces.
  6. Now...for the salad
  7. Add all the above ingredients in a large bowl.
  8. Break apart and crush slightly the ramen noodles (raw)
  9. Save seasoning pack for dressing.
  10. Dressing.
  11. Dressing Seasoning pack form the Ramen Noodles 1/2 cup sugar
  12. 1 tablespoon sesame oil
  13. 2/3 cup vegetable oil
  14. 6 tablespoons seasoned rice vinegar
  15. Mix in well in a large glass.....and pour onto salad...toss.
  16. Add crushed ramen noodles last, toss and serve.
  17. Great with rolls and diet coke.
  18. For a salad like they make at Nordstrom Cafe, try
  19. LIGHTHOUSE SESAME GINGER DRESSING instead of the packet dressing.
  20. It's fat free and is more of a punch of flavor if you love Chinese Chicken Salad.
  21. I pour a ton on and am in heaven!
