Apricot Coconut Salad

Ingredients:

  • 1 can(17 oz.) apricot halves
  • 1 package(3oz.) apricot jell-o or peach jell-o
  • 1 package(8oz) cream cheese
  • 1 1/2 cups(about) angel flake coconut
  • salad mold / container

Directions:

  1. Drain apricots, reserving 3/4 cup syrup.
  2. Chop the apricots.
  3. Dissolve jell-o in boiling water
  4. Add measured syrup and chill until slightly thickened.
  5. Blend cream cheese and small amount of gelatin in blender until smooth.
  6. Gradually add remaining jell-o, blending well.
  7. Chill until slightly thickened.
  8. Fold in coconut and apricots.
  9. Pour into a 4-cup mold or individual molds
  10. Chill until firm. about 3 hours.
  11. Unmold
  12. Makes 4 cups or 8 servings
