Ingredients:

  • 3/4 cup dried apricot
  • 1 egg
  • 2 tbsp butter
  • 2 cups flour
  • 3/4 tsp salt
  • 1/4 tsp baking soda
  • 1/2 cup orange juice
  • 1/4 cup cold water

Directions:

  1. Soak apricots 1/2 hour; drain and cut up.
  2. Cream butter, sugar and egg; add dry ingredients alternately with liquid . Fold in apricots.
  3. Bake 45 minutes in 350F oven (or a little longer).
