Applesauce Spice Cake With Xylitol

Ingredients:

  • 1 1/2 cups plus 2 tbsp unsweetened applesauce
  • 2 eggs
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/4 tsp clove
  • 1/2 tsp nutmeg
  • 1/2 tsp allspice
  • 1 cup finely chopped apple
  • 1/2 cup raisins

Directions:

  1. Rehydrate raisins by covering with warm water; soak for 30 minutes, then drain.
  2. In one bowl, cream together butter and xylitol, gradually adding 2 tablespoons applesauce during creaming process.
  3. Beat in eggs, then stir in remaining applesauce.
  4. In a separate bowl, combine flour, baking powder, baking soda, salt and spices.
  5. Slowly add dry ingredients to applesauce mixture while stirring well.
  6. Stir in chopped apples and raisins.
  7. Pour batter into buttered and floured 8-inch square baking pan.
  8. Bake at 350º for 40-45 minutes (until toothpick inserted into center comes out clean).
