Ingredients:

Directions:

  1. In a bowl, combine flour and sugar; cut in butter until crumbly.
  2. In a small bowl, combine egg yolk and vanilla; stir into flour mixture.
  3. Press onto the bottom of an ungreased 9-in. springform pan.
  4. Place pan on a baking sheet.
  5. Bake at 400° for 10-12 minutes or until set. Cool on a wire rack.
  6. Reduce heat to 350°.
  7. Place apples in an ungreased 13-in. x 9-in. baking dish.
  8. Cover and bake at 350° for 20 minutes or until tender; drain and cool.
  9. Meanwhile, in a large bowl, beat the cream cheese, 1/2 cup sugar and vanilla until smooth.
  10. Add eggs; beat on low speed just until combined.
  11. Pour over crust.
  12. Toss baked apples with cinnamon and remaining sugar.
  13. Arrange apples over cream cheese layer; drizzle with any remaining cinnamon mixture.
  14. Sprinkle with nuts.
  15. Return pan to baking sheet.
  16. Bake at 350° for 40-45 minutes or until center is almost set.
  17. Cool on a wire rack for 10 minutes.
  18. Carefully run a knife around the edge of pan to loosen; cool 1 hour longer.
  19. Refrigerate for 4 hours or overnight.
  20. Remove sides of pan.
  21. Use a sharp knife to cut.
  22. Refrigerate leftovers.
  23. Yield: 12-14 servings.
