Ingredients:

  • 4 medium-size sweet potatoes
  • 1 1/3 cups soft breadcrumbs
  • 1/3 cup applesauce
  • 1/4 tsp salt, divided

Directions:

  1. Cook sweet potatoes in boiling water to cover 35 minutes or until tender. Drain; let cool to touch. Peel and cut into quarters. Set aside.
  2. Combine sausage, breadcrumbs, milk, applesauce, and 1/8 teaspoon salt in a large bowl. Shape meat mixture into a loaf; place in a lightly greased 13- x 9- x 2-inch baking pan. Bake at 350° for 1 hour. Add quartered sweet potatoes, and sprinkle with remaining salt. Bake an additional 20 minutes, basting potatoes frequently with pan drippings.
  3. Remove meat loaf and potatoes to a warm serving platter; discard pan drippings. Slice meat loaf. Serve with sweet potatoes,
