Ingredients:

Directions:

  1. Preheat oven 350.
  2. Coat 18 Muffin Cups With Cooking spray
  3. Mix Whole Wheat Flour and 1/3 C Soy Flour,.
  4. 1/4 C Soy Grits. ( if you dont have soy Regular Grits Work So I am told).
  5. 1 Teaspoon Baking Soda,1 Teaspoon Baking Powder,1/2 Teaspoon Salt,.
  6. 1 Tsp Cinnamon into a meduim bowl and set aside.
  7. Cream the Applesauce and sugar in a large bowl,
  8. Whisk the egg replacer with water in a small bowl until foamy, and then whisk in the 1/4 C Unsweetened Applesauce and 1/3 Cup Sugar. add to that the soy milk and vanilla, and mix thougoughly-
  9. Fold in the wet ingredients into the dry ingredients just until mixed.
  10. Fold in the walnut pieces with the soy grits and add to the batter the Raisins and apples.
  11. Do Not Over Beat.
  12. Spoon Batter into Muffin cups. and filling any empty cups with water
  13. Bake for 15 Minutes or until toothpick comes out clean.
