Ingredients:

  • 1 1/3 cups of pancake mix
  • 2/3 cup of evaporated milk
  • 2/3 cup of water
  • ( i substitute 1 cup of whole milk , i like a thicker batter)
  • 1 cup of finely chopped peeled apples
  • 2 tbsp of melted butter
  • 1/2 tsp of cinnamon
  • 1/4 tsp of lemon juice
  • 1 tsp of sugar

Directions:

  1. Mix pancake mix and milk mixture, slowly.
  2. Fold in the apples.
  3. Stir in butter, cinnamon, lemon juice and sugar.
  4. Bake on a slightly greased griddle.
  5. Don't beat the batter until smooth, makes it tough.
  6. When drops of water dance on the griddle it is o.k.
