Apple Butter Spice Muffins

Ingredients:

  • 1/2 cup sugar
  • 1 teasp. cinnamon
  • 1/4 teasp. nutmeg
  • 1/8 teasp. allspice
  • 2 cups flour
  • 2 teasp. baking powder
  • 1/4 teasp. salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/4 cup apple butter

Directions:

  1. In large bowl... combine sugar, cinnamon, nutmeg, and allspice
  2. In small bowl... toss 2 TBSP. sugar mixture with the pecans
  3. To the sugar mixture in the large bowl... add flour, baking powder, and salt. mix well
  4. In medium bowl.... combine milk, oil, and egg. mix well
  5. Add to the flour mixture
  6. Stir just until mixture is moistened... do not over mix
  7. Grease or paper line 12 ( 2 1/2-inch ) muffin cups
  8. Spoon 1 TBSP. batter into each cup
  9. Spoon 1 teasp. apple butter into each cup
  10. Spoon remaining batter evenly over apple butter
  11. Sprinkle pecan mixture over each muffin
  12. In preheated 400' F oven bake 20 - 25 minutes or until a toothpick inserted in the middle of muffin comes out clean
  13. Immediately remove from pan
  14. Cool on wire rack for 10 minutes
  15. Serve warm or cold
  16. Makes 12 muffins
