Antoine's Soupe a L'oignon Gratine

Ingredients:

Directions:

  1. Melt butter in large soup pot and cook onions until they are golden brown.
  2. Stir in flour and cook for about 2 minutes.
  3. Add beef stock and bring to a boil.
  4. Turn heat down to low and simmer soup gently for 30 minutes.
  5. Add salt and pepper to taste.
  6. Mix all cheeses together.
  7. Ladle soup into 6 bowls that can go under a broiler, and float one piece of toast in each.
  8. Sprinkle toasts with the cheese mixture.
  9. Place bowls under broiler until cheese melts and begins to brown.
  10. Enjoy!
