Ingredients:

Directions:

  1. Place the lettuce mix on large platter (or 4 individual plates).
  2. Slice salami into quarters. Scatter evenly over lettuce. Cut cheese into bite-size squares and scatter over lettuce.
  3. Rinse and drain chickpeas; drain olives. Scatter over salad.
  4. Peel and thinly slice cucumber and arrange on salad.
  5. Cut each tomato into quarters and place evenly around outer edge of plate.
  6. Place the pepperoncini at even intervals.
  7. Juice lemon into bowl. Add vinegar, oregano and garlic. Whisk until well combined.
  8. Add olive oil slowly while whisking until thoroughly blended.
  9. Drizzle vinaigrette over salad, eat!
