Anne's Tomatoe Basil Soup

Ingredients:

  • 6 medium tomatoes
  • 3 cups of chicken broth
  • 1 cup of cream
  • 1 stick of butter, unsalted
  • 1/2 cup of fresh basil

Directions:

  1. Steam tomatoes for 5 minutes.
  2. Remove tomatoes from steamer and rinse in cold water. Then remove the skin from the tomato.
  3. In a large soup pot, bring 3 cups of chicken stock to a boil, then reduce heat to low.
  4. Add skinned tomatoes, red pepper flakes, and basil to stock, cook until basil becomes wilted.
  5. Blend soup with a hand mixer until tomatoes and basil are well incorporated into the soup.
  6. Cover and simmer on low for 30 min. Stir every so often.
  7. Add stick of butter and cup of cream. Stir until butter is fully melted, then blend with hand mixer for a few minutes.
  8. Simmer uncovered on low for 10 minutes stirring frequently.
  9. Serving size is 1 cup.
