Ambrosia Cherry Tomato And Pepper Dish

Ingredients:

Directions:

  1. Preheat oven to 350 degrees See Photo
  2. Slice cherry tomatoes in half, place in glass baking dish
  3. Slice peppers in half remove stems and seeds, add to baking dish
  4. Pour olive oil over veggies, sprinkle with salt
  5. Put uncovered in oven, bake for 45 to 55 minutes, stirring once or twice, making sure not to burn - but instead nicely carmelize.
  6. Let sit for a few minutes before serving.
  7. Can be further processed into a spread for Italian bread, an addition to scrambled eggs, a side dish very well suited to pasta or chicken.
  8. In my house this is one of the most requested side dishes.
