Ingredients:

  • 600 ml milk (1 pint) or 600 ml low-fat (1 pint)
  • 2 tbsp cream
  • 100 g ground almonds (3.5 oz, almond meal)
  • 3 tbsp sugar

Directions:

  1. Blend the cornstarch with a little of the milk. Add the remaining milk.
  2. Add the egg and cream, whisk well.
  3. Pour the mixture into a small saucepan and stir constantly over a low heat until the custard thicks. DO NOT BOIL as your mixture may curdle.
  4. Alternately, instead of the saucepan mixture-you can use the micro-wave. Use medium low heat and stir at 1 minute intervals until the custard thickens.
  5. Stir in the ground almonds, vanilla and sugar.
  6. Serve warm or cold as desired.
