Ingredients:

Directions:

  1. Cook brown rice to directions on package.
  2. Heat water and olive oil in deep skillet or wok.
  3. Add onions and mushrooms, cook until onions begin to brown/caramelize.
  4. Add remaining ingredients and more water if necessary to prevent sticking. Cook until vegetables begin to tender.
  5. Season with herbs to taste for negligible additional calories. (I like parsley, oregano and basil. Thyme or rosemary can also be a nice option)
  6. Remove from heat and serve.
