Ingredients:

Directions:

  1. Heavily spray a baking sheet with cooking spray.
  2. Place lollipop sticks about 3 inches apart on baking sheet.
  3. In a heavy saucepan, combine sugar, coffee, and corn syrup.
  4. Stirring constantly, cook over medium-low heat until sugar dissolves.
  5. Cover and cook 2 to 3 minutes to wash down any sugar crystals on sides of pan.
  6. Attach a candy thermometer to pan, making sure thermometer does not touch the bottom of pan.
  7. Increase heat to medium and bring to a rolling boil.
  8. Cook without stirring, until mixture reaches 292 degrees.
  9. Test about 1/2 teaspoons mixture in ice water.
  10. Mixture will form brittle threads in ice waterand will remain brittle when removed from water.
  11. Remove from heat.
  12. Stir in liqueur.
  13. Spoon about 1 tablespoon hot candy over 1 end of each lollipop stick to form a 2-1/2 inch diameter circle.
  14. Let candy cool.
  15. Wrap individually in small plastic bags or plastic wrap.
  16. Store in airtight container.
