Acorn Squash With Brown Sugar Pecan Topping

Ingredients:

  • 2 small acorn squash
  • 1/2 tsp salt
  • 2 tbsp water
  • 1/4 cup packed light brown sugar

Directions:

  1. Pre heat oven to 375.
  2. Cut each squash in half lengthwise then discard seeds.
  3. Cut squash crosswise into 1” slices.
  4. Place slices in a single layer in a jelly roll pan.
  5. Sprinkle with salt then drizzle water around squash.
  6. Cover pan lightly with foil then bake 30 minutes.
  7. Meanwhile in small bowl stir nuts with brown sugar and butter until combined.
  8. Spoon mixture evenly over squash then bake uncovered for 15 minutes.
