A Salad of Arugula (Rocket), Cherry Tomatoes and Sesame Seed

Ingredients:

  • 20 oz arugula , picked through, rinsed and spun dry
  • 2 tbsp toasted sesame seeds (toast in small skillet for 5-6 minutes , until golden and fragrant)
  • 6 tbsp olive oil
  • 1 1/2 tbsp red wine
  • 1 1/2 tsp balsamic vinegar
  • 1 1/2 tsp honey (if you have greek thyme you're set!)
  • 1/3 tsp coriander

Directions:

  1. Put the arugula and cherry tomato halves into a large bowl.
  2. Keep in refrigerator until ready to serve.
  3. Whisk all the dressing ingredients until emulsified and dress the salad.
  4. Toss well to coat and distribute amongst 4 salad plates.
  5. Sprinkle sesame seeds over top.
