Ingredients:

  • 3 lbs chicken , cut into pieces
  • 1 cup buttermilk
  • 1/2 cup flour
  • 1 tsp salt
  • 1/2 tsp ground sage
  • 1/4 tsp paprika
  • 1/4 tsp pepper
  • 1 tbsp water

Directions:

  1. Rinse chicken pieces, pat dry and place in a shallow dish for marinating.
  2. Pour buttermilk over chicken and marinate for 30 minutes, turning occasionally.
  3. Combine flour, salt, sage, paprika and pepper in paper bag.
  4. Add chicken and shake to cover.
  5. Dip chicken in egg and roll in breadcrumbs.
  6. Let stand for 15 minutes.
  7. Pour oil into large skillet to a depth of 1 inch and heat to 375°F or until water spatters when sprinkled on oil.
  8. Add chicken legs and thighs first.
  9. Fry until browned about 10-12 minutes before adding remaining pieces, frying another 10 minutes or until brown.
  10. Drain chicken on paper towels before serving.
