1950s Filled Oatmeal Cookies

Ingredients:

Directions:

  1. Mix together dry ingredients except sugar
  2. Cobine brown sugar, shortening and warm water and mix well
  3. Add flour mixture and beat smooth
  4. Add oatmeal and mix well with spoon
  5. Roll out dough to 3/8 inch thick on a floured work surface.
  6. Cut out some with floured cookie cutter
  7. If possible use a donut cutter has it has a hole already to put in the jelly
  8. Cut out remainders without a hole
  9. PLace 1 tsp of jelly on flat cookie and place 2nd cookie with hole on top so jam or jelly peeks out
  10. Bake about 10 to 13 minutes in 350 F until cookies are pale golden and done
  11. Cool carefully on rack
