Date Filled Oatmeal Cookies

Ingredients:

  • 2 cups butter or 2 cups margarine, softened
  • 2 cups brown sugar , packed
  • 1 cup milk
  • 4 cups rolled oats
  • 1 tsp salt
  • 2/3 cup water

Directions:

  1. Cream butter and sugar together well.
  2. Slowly mix in milk.
  3. Add remaining ingredients.
  4. Mix well.
  5. Chill for 1 hour.
  6. Roll out fairly thin on lightly floured board.
  7. Cut into 2 1/2-inch rounds.
  8. Place on ungreased baking sheets.
  9. Bake in 350°F oven for 8-10 minutes.
  10. Cool.
  11. Fill with Date Filling, to form a sandwich.
  12. For date filling: combine dates, sugar and water in saucepan.
  13. Bring to a boil.
  14. Simmer, stirring often, until mushy and thickened.
  15. Add more water if too dry, or simmer longer if too runny.
  16. Cool and spread between cookies.
