Zucchini Oatmeal Muffins

Ingredients:

  • 2 1/2 cups flour
  • 1 1/2 cups sugar
  • 1 1/2 cups oatmeal
  • 1 tsp salt
  • 1 tbsp cinnamon
  • 4 eggs
  • 3/4 cup vegetable oil

Directions:

  1. In bowl mix together flour, sugar, pecans, oatmeal, baking powder, salt and cinnamon. Add eggs, zucchini, and vegetable oil. Mix until ingredients are barely moistened. Batter will be lumpy. Put in greased muffin tins. Bake in 350 degree oven for 15 to 20 minutes. Makes 21 regular sized muffins.
