Ingredients:

  • 3 eggs
  • 2 cup sugar
  • 1 tsp vanilla
  • 3 cup flour
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 3/4 tsp nutmeg
  • 1 tbsp cinnamon
  • 1/2 cup raisins (optional)

Directions:

  1. Mix together eggs, oil, sugar zucchini and vanilla. Set aside.
  2. Mix together flour, baking powder, baking soda, salt, nutmeg and cinnamon.
  3. Add to first mixture. Add raisins if desired.
  4. Pour into 2 greased and floured loaf pans. Bake at 350 degrees for 50-
  5. Mins or until the center springs back when touched.
