Blueberry Zucchini Bread

Ingredients:

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 3 tsp vanilla
  • 3 cups flour
  • 1 tsp salt
  • 3 tsp cinnamon
  • 1/2 tsp nutmeg

Directions:

  1. Beat eggs till foamy.
  2. Add oil,sugar,zucchini,and vanilla.
  3. Mix lightly.
  4. Sift dry ingredients together and gradually add to egg mixture.
  5. Blend well.
  6. Add blueberries and fold into batter.
  7. Pour into a loaf pan and bake at 350 dgrees for 45 minutes.
  8. Check at 30 minutes to prevent burning.
