Ingredients:

  • 1/4 tsp baking powder
  • 1 cup chopped nuts , optional
  • 1 tsp cinnamon
  • 1 tsp cloves
  • 3 eggs
  • 1 tsp ginger
  • 1 cup oil
  • 1/2 tsp salt
  • 3 cup sifted flour
  • 1 tsp soda
  • 2 cup sugar
  • 1 tsp vanilla

Directions:

  1. Beat eggs until light and foamy. Add oil, sugar, zucchini, vanilla. Then add all dry ingredients and nuts. Pour in 2 greased and floured loaf pans. Bake at 325 degrees for 1 hour.
