Ingredients:

  • 2 1/2 cups sugar
  • 3 eggs
  • 2 cups white flour
  • 2 cups wheat flour
  • 1/4 cup oil
  • 3/4 cup applesauce
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp cinnamon
  • 1 tbsp vanilla

Directions:

  1. Sift together white and wheat flours, baking powder, baking soda, salt and cinnamon.
  2. Set aside.
  3. Beat together eggs and sugar.
  4. Add oil and applesauce.
  5. Stir in shredded zucchini.
  6. Add vanilla.
  7. Fold in dry ingredients.
  8. Spray loaf pans with non-stick cooking spray.
  9. Use 2-3 2 1/2 x9 loaf pans, depending on desired size of loaf.
  10. Bake at 350 for 45-55 minutes.
  11. Bread is done when fork inserted in center comes out clean.
  12. Cool loaf pans on baking rack for 10 minutes.
  13. Loosen sides of bread with knife and invert loaf pans to release bread and continue cooling on baking rack.
