  1. In a large skillet, melt 3 Tbsp. butter over medium heat. Add 5 chopped scallions and cook, stirring, until softened, 3 minutes. Stir in 1 tsp. grated fresh orange peel and salt and pepper to taste. Increase heat to medium-high, add 3 (10 oz.) packages frozen baby peas and cook, stirring, until heated through, about 5 minutes. Serves 8.
