Yogurt and Beet Dip

Ingredients:

  • 16 oz. sliced beets
  • 1 cup fat free yogurt , drained in cheesecloth
  • 1 tbsp fresh mint

Directions:

  1. Cut the beets into 3/4 dice.
  2. Immediately before serving, mix the yogurt and sugar with the beets. Transfer to a serving bowl and garnish with the mint.
