Ingredients:

  • 1 cup water
  • 1/2 tsp salt
  • 1/4 cup butter

Directions:

  1. Combine first 4 ingredients in a large saucepan and bring to a boil. Reduce heat to medium; cook, uncovered, 15 to 20 minutes or until squash is tender, stirring frequently.
  2. Drain well in a colander; transfer to a bowl, and use a potato masher to mash coarsely with butter and pepper.
