Yams Twice Baked

Ingredients:

  • 3 medium yams
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1/4 cup raisins
  • 1/4 cup finely chopped pecans
  • 1/2 tsp cinnamon
  • miniature marshmallows

Directions:

  1. Wash potatoes then blot dry and prick with a fork to allow steam to escape.
  2. Rub a light coating of vegetable oil onto potato skins then bake at 375 for 45 minutes.
  3. Cut a thin lengthwise slice from the top of each potato.
  4. Scoop out inside being careful to leave a thin shell.
  5. Mash potatoes in a mixing bowl until no lumps remain.
  6. Add butter, brown sugar, raisins, nuts, drained pineapple and cinnamon.
  7. Fill potato skins with mixture.
  8. Increase oven to 400 and place potatoes in an oven proof dish and bake for 20 minutes.
  9. Remove dish from oven then set oven to broil.
  10. Place several marshmallows on top of each potato then place under broiler for 5 minutes.
