World's Greatest Pita Bread

Ingredients:

  • 5 tsp yeast
  • 1/4 tsp sugar
  • 1 cup warm water
  • 1/4 cup olive oil
  • 1 1/2 tbsp salt
  • 1 1/2 cups warm water
  • 6 cups flour

Directions:

  1. Combine the yeast, sugar and water. Let stand until foamy.
  2. Add the oil, salt, water and flour 1 cup at time until a dough forms.
  3. Knead until smooth.
  4. Place in a sprayed bowl. Cover with a damp towel. Let rise 2 hours.
  5. Punch down. Return to bowl. Cover. Let rest 30 minutes.
  6. Knead briefly. Divide into 12 pieces.
  7. Roll out each into a 4-6 inch circle.
  8. Place on sprayed wax paper, then cover with more sprayed wax paper.
  9. Let rest 30 minutes.
  10. Heat a dry iron skillet over medium heat.
  11. Cook each pita about 3 minutes each side or until puffed and speckeled.
  12. Wrap each in foil when done.
  13. Serve warm.
