White Texas Sheet Cake

Ingredients:

  • 2 2/3 cups flour
  • 2 cups sugar
  • 1/2 cup vegetable oil
  • 1 cup water
  • 2 eggs
  • 2 tsp vanilla
  • 1 tsp cinnamon (can use more if desired)
  • 1 1/2 tsp baking soda
  • 2/3 cup buttermilk
  • 1 tsp vanilla
  • 1 (8 oz) package cream cheese, softened
  • 2 cups sifted powdered sugar ( icing)

Directions:

  1. Set oven to 350 degrees F.
  2. Grease a 17 x 11 baking sheet.
  3. In a bowl mix together the flour and sugar.
  4. In a saucepan, combine 1/2 cup butter, oil and water; bring to a boil, then pour over flour mixture; beat thoroughly.
  5. Beat in eggs, vanilla, cinnamon, baking soda and buttermilk.
  6. Pour into prepared baking pan.
  7. Bake for about 20 minutes or until cake tests done.
  8. For frosting;: Cream together 1/2 cup butter, 1 tsp vanilla and the cream cheese; beat in icing sugar, adding more, if necessary to reach the desired consistency.
  9. Beat until light and fluffy.
  10. Spread over warm cake.
