Ingredients:

  • 1/4 cup cold water
  • 4 tbsp flour
  • 1/2 tsp salt
  • 1 1/2 cups milk
  • 3/4 tsp vanilla
  • 1/2 cup whipped cream
  • 18 inches pie crusts

Directions:

  1. In a small bowl soak gelatin in water.
  2. In a saucepan, mix 1/2 cup sugar, flour,salt and milk cook over low heat stirring until mixture comes to a boil.
  3. Boil for 1 minute and remove from heat.
  4. Stir in softened gelatin and cool.
  5. When Partially set beat until smooth.
  6. Blend in vanilla, almond extract and whipped cream.
  7. In a seperate bowl beat eggs and cream of tartar.
  8. Add 1/2 cup sugar and beat until soft peaks form.
  9. Fold into gelatin mixture then fold in baked coconut.
  10. Divide equally into pie shells.
