White Bean, Chicken and Goat Cheese Bowties

Ingredients:

Directions:

  1. Cook pasta according to package directions.
  2. Slice the chicken breast, sprinkle with salt and pepper and saute it until cooked through over medium heat. Remove from pan.
  3. In same pan that chicken was cooked in, add the chopped onions and the garlic, saute on medium heat for about 2 minuets, until they soften. Add the chopped tomatoes, chicken, beans, thyme, bay leaf and balsamic vinegar.
  4. Cook for about 20 minuets. If the sauce looks to be to thick, add some pasta water to loosen it up. Remove from heat.
  5. Once pasta is cooked, add it to the saute pan with the chicken mixture. Stir well. Crumble the goat cheese and toss it with the pasta gently.
  6. Serve with additional parmesan cheese if desired.
