Whipped Shortbread

Ingredients:

  • 1 lb butter
  • 1 tsp vanilla
  • 1/2 cup cornstarch
  • 3 cups flour

Directions:

  1. Preheat oven to 350 degrees.
  2. Cream together butter, icing sugar, vanilla and salt.
  3. Gradually add cornstarch and flour.
  4. Whip with an electric mixer until fluffy.
  5. Place into a cookie press and press out cookies on cool baking sheet.
  6. Decorate with candied cherries or dragees if desired.
  7. Bake 12-15 minutes.
  8. Let cool for 2 minutes on baking sheet, then remove to wire rack to cool completely.
  9. Store in an airtight container at room temperature.
