Wheat Germ & Applesauce Loaf

Ingredients:

  • 2 eggs
  • 1/3 cup honey
  • 1/3 cup vegetable oil
  • 1 1/2 cups applesauce
  • 1/2 cup chopped nuts
  • 2 tsp lemon zest
  • 2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup wheat germ
  • 1/4 cup wheat bran

Directions:

  1. Beat the eggs until they are light in color and thickened, beat in the honey, oil,& applesauce Stir in the nuts& lemon rind.
  2. Mix the dry ingredients, stirring until well mixed.
  3. Add the dry ingredients to the egg mixture and stir gently until just mixed Pour into a greased loaf pan (3L, apprx 9 3/4 x 5 3/4 pan).
  4. Bake in a 350F oven for apprx 1 hour.
  5. Cool in the pan for 10 minutes then remove and finish cooling on a rack.
