Directions:

  1. In bowl of electric mixer, using paddle attachment, mix together cocoa, powdered sugar, and salt on low speed for 1 minute.
  2. In a small bowl, whisk together vanilla and egg whites.
  3. While mixer is on, slowly add egg white mixture to dry ingredients. Turn up to medium speed and mix for 2 minutes.
  4. Using a 2 oz ice cream scoop, scoop about 2 oz. of dough onto sprayed parchment paper in the cookie sheet, spacing mounds about 3�apart.
  5. Bake at 325 degrees 12-15 minutes or until small thin cracks appear on the surface. These cookies will want to stick to the paper, even though sprayed.
