Walnut and Raisin Oatmeal Cookies

Ingredients:

  • 1 cup shortening
  • 2 eggs
  • 1 cup oatmeal
  • 2 tsp vanilla
  • 2 cups sugar
  • 2 1/2 cups flour , sifted
  • 1 tsp salt

Directions:

  1. Cream sugar and shortening thoroughly. Add eggs and mix well. Add ground raisins and nuts; mix well.
  2. Sift together dry ingredients and add to shortening mixture.
  3. Add vanilla and mix all together.
  4. Roll in 1-inch balls; place on greased cookie sheet 2 inches apart and flatten with a fork.
  5. Bake at 350° for 10 to 12 minutes.
