Ingredients:

  • 3/4 cup egg beaters
  • 10 oz spinach
  • 1/2 cup green pepper
  • 1/2 cup mozzarella

Directions:

  1. Dice green peppers & use reduced fat cheese
  2. Line cupcake pan w/ liners
  3. Spray w/ pam
  4. Mix all ingredients together
  5. Bake 350 for approx 20 min (until a knife comes out clean)
  6. Can be frozen
  7. Microwave for 1 min to reheat
