Ingredients:
3/4 cup egg beaters
10 oz spinach
1/2 cup green pepper
1/2 cup mozzarella
Directions:
1. Dice green peppers & use reduced fat cheese
2. line cupcake pan w/ liners
3. spray w/ pam
4. mix all ingredients together
5. bake 350 for approx 20 min (until a knife comes out clean)
6. can be frozen
7. Microwave for 1 min to reheat
