Veggie and Seitan Crock Pot Stew

Ingredients:

  • 1 (8 oz) package seitan , strips
  • 1 (15 oz) can soup beans , barley , and lentils
  • 1 (14 1/2 oz) can diced tomatoes
  • 2 cups rice or 2 cups pasta , of your choice
  • 1/2 onion

Directions:

  1. Cook the pasta and drain it.
  2. Chop up the vegetables.
  3. Combine all ingredients in your Crock Pot.
  4. Cook on high for 4 hours, or on low for 8.
