Ingredients:

  • 1 tbsp olive oil

Directions:

  1. Wash the vegetables.
  2. Peel the skin off of the vegetables & keep peeling them down to the core with a vegetable peeler while putting the peelings into a medium bowl.
  3. Add oil & mix well.
  4. Serve in small bowls.
