Ingredients:

Directions:

  1. Spray soup pot with nonstick spray and saute onions and pepper until tender.
  2. Add carrots, broccoli, spinach, and spices, and saute for 4-5 minutes.
  3. Add vegetable broth and bring to a boil. Reduce heat and cover. Simmer for 30 minutes or until carrots are tender.
  4. Stir in beans, peas, tomatoes, and corn.
  5. Remove from heat and stir in couscous.
  6. Cover and let it sit for about 5 minutes, then serve.
