  1. Rehydrate the soya mince with 1/2 pint vegetable stock and leave for 15 minutes, dont worry if mince has not absorbed all the liquid and dont bother to drain it, as this is all is part of the sauce.
  2. Heat the oil and fry off the onion until soft, add the garlic, pepper and carrots and saute, then add the balsamic vinegar, soya mince tomatoes,sundried tomatoes and tomato puree, mix and stir well, add the salt and pepper, season to taste, and add the dried mixed herbs and the bay leaf. Bring back up to temperature and place lid on and cook on a medium to low heat for 20-30 minutes, checking and stirring occasionally. If sauce becomes dry or you feel it needs more liquid add a little vegetable stock stir.
